The Domaine Pierre Sourdais is located between the village of Cravant-les-Coteaux and the Old Town with its Carolingian church, nestled in the Valley of the Moulin à Tan, the tower which dominates the property will indicate the location.

The main wealth of the estate are the 27 hectares of vines planted exclusively with Cabernet Franc, some of which are over 60 years old. Chinon Pierre Sourdais has built its notoriety on this red “Breton” variety. For the soils where the vineyard is anchored, the gravel pits on the terraces on the banks of Vienne firstly make it possible to obtain wines whose main attractions are the fruity and easy-drinking aspects. The clay-limestone and siliceous plateaus offer wines for laying down which acquire structure and character.

After organic production, the harvest is carried out by hand, in crates and at optimum maturity. Then begins the work of the wine which will be different depending on the specificities of the plots and the impact of climatic conditions. The vatting time is thus adapted, as is the vinification temperature, pumping over, unballasting and punching down. In any case, the main concern for Pierre Sourdais is to preserve as faithfully as possible the pleasant and interesting expression of Cabernet Franc in each of the terroirs.

The aging will also refine these choices, but the tasting, the moment of truth, remains the master of the interventions and it is she who will also decide the date of bottling.
