Fontainebleau is a little corner of paradise nestled in the heart of Haut Var, between the sea and Provence, in the town of Val, not far from Brignoles. Land, fresh water, forests, vines and good wine, this is what this place offers a gentle way of life. With its 150 hectares including 25 of vines, it is a sumptuous property, in absolute calm which has kept all its natural authenticity. It owes its name to the providential presence of water. While strolling in the park and along the rivers, visitors can admire just 18 fountains, a waterfall, magnificent terraces, vineyards and olive trees. And yes, the estate also produces its own olive oil! The bastide, residence of the owners, Monsieur and Madame Bouchard, dates from the 18th century and was completely renovated in 2009.
Its rosé, red or white wines with strong identities are loaded with aromas and fruity flavors. The vineyard is divided between Grenache, Cabernet Sauvignon, old Carignans, Ugni Blanc, Syrah, Vermentino for the youngest vines and old Cinsaults. The château, with the Coteaux Varois en Provence appellation, is in conversion to the principles of biodynamic methods. The Fontainebleau terroir is very interesting for the production of great white wines. One of the particularities of the estate is its incredible diversity of soils. There are no less than 4 varieties, from the Permian terroir to the red clay terroir, including limestone soils and clay tuffs ... The configuration of the estate means that only manual harvesting is possible. Valérie Courrèges, renowned oenologist, works for this very specific terroir with the aim of enhancing the interactions between the vine, the soil and the clim.
The estate offers a tour of its cellars accompanied by an introduction to tasting, as well as carriage rides. Any gourmet can also stop for a moment on the panoramic terrace with his menu of artisanal tapenades, foie gras, anchovies, cream cheese, ice cream and so on! These bistronomic delicacies will go perfectly with the wines of the property which will be served to you by the glass or the bottle. In summer, musical entertainment is offered such as the Musicales dans les vignes jazz festival, the Fête de la musique, etc.
Finally, the sales cellar is open from October to May from Monday to Saturday between 10 a.m. and 6 p.m., and every day from 10 a.m. to 7 p.m. during the summer period.
